Dinner Group

This summer we joined a dinner group! (Probably one of the smartest things we have ever done!) The group that we joined had been doing it for 2 years. We make 4 dinners (3 more other than ours) and deliver them (hot- and ready to eat) around dinner time to 3 other families. My night is on monday. Then the rest of the week, (Tues, Wed, Thurs.) I sit back and dinner is delivered to us. It is so great to come home from the kid's piano practice at 5pm and not have to make a rushed dinner before Jon comes home! It is also great because everyone has different cooking styles and we are always surprised by what is for dinner. Jon and I have really enjoyed it. The kids feel the same about it as they do about my dinners (Sometimes they eat it- sometimes they don't).
This is what I made this week. (Our ward recently did a cookbook and I got some super yummy recipes out of it!) This one came from a good friend of mine! Jon said that it was like eating a burrito- He even gave me a kiss and thanked me for it. (Something that he does when he really likes a meal!- although he doesn't really realize that he does it!)

Stacked Enchilada Bake
12-14 Corn Tortillas (I used flour tortillas the first time I made this and I think that we liked it better!)

2 cans chili

1 can (10 oz.) enchilada sauce

1 1/2 cup shredded cheese

3 medium green onions, diced

Topping:

Shredded lettuce

Chopped tomatoes

Chopped Avocados

Sour cream

Salsa

Pour a small amount of enchilada sauce in the bottom of a 9x9 casserole dish. Place warmed tortillas in the casserole dish to cover enchillada sauce. Top the tortillas with chili, diced green onions, cheese and a small amount of enchilada sauce. Repeat layers. Sprinkle the remaning cheese and pour the leftover enchilada sauce on the top layer of tortillas. Bake uncovered at 400 degrees until bubbly around the edge. Top each serving of the casserole with shredded lettuce, chopped tomatoes, avacados, sour cream, and salsa.

I Love food- (no wonder why I can't loose this baby weight- huh!) I will have to post more recipes. Maybe have like a "Food Friday" and share a favorite recipe. I will think about it! If you have a fav. recipe, share it with me- I am always looking for cheap, easy meals to make in large quanities!

-Oh yeah- You probably want to know what I did with the dining set! Well- the furniture store is gonna take back the table. (They are coming for it today!) I will keep the chairs (Because I love them and I can't have upholsterd chairs with 4 kids). And I ordered This table! Don't worry- this one I have actually seen at a furniture store- so- there is no guessing this time!

A Sunbeam, A Sunbeam........

Bridger is now in Sunbeams. (what- didn't we just have him last week?) He did well on Sunday. He just sat there with a "This- is- new" look on his face. His Sunday school teacher, Sis. King is the best! Nolan and Carli both had her for Sunbeams! She made them all gi-normas hats that Bridger insisted on wearing all day Sunday (Even though we had dessert with some friends that night!) I finally figured out how to add music to my blog. Hope you are enjoying it. I love this song by Brandi Carlile. There aren't many songs that I hear that I love the first time I hear them, but this was one. I love music. I am one of those people that wishes that life was set to music. (Like in the movies) You know, like if you are happy, then a jiggy, uplifting song starts to play. Or if you are feeling adventurous then the Indiana Jones theme starts to play. Or if you are sad, then you hear the "Hero" song from 'Beaches'......you get the idea! I guess that I can set my life to music now with my blog!

What the Heck!!!!!!!!!!!!

I am super frustrated and gonna use today's blog to vent!!! (I am only human!) However, if you don't want to put up with my negativity, then you can take this time to read an old post of mine, like This or This, or wait for the next one! Here goes............. My new dining table came and is Not what I expected! It is sure Lovely! but square! I made the gal at the furniture store measure and calculate with me how big it was gonna be for 45 mins. (So I wouldn't be in a mess like this) And we still got it wrong. I think that we could even live with the square-ness but realized that it has grooves on the top. It sure is cute, but if I kept it, it would be committing "furniture suicide!" With 4 kids, I would have to scrape and vacuum the grooves daily! I don't even have time for a shower every day. How on earth am I gonna keep up with de- gunking the table top every day? What the Heck !?!



My littlest son has been sick this past week. He got his first ear infection (of many- knowing the other ones as babies) and as been horribly grouchy and uncomfortable all week. He has been soooooooo gas-sy that it takes about 1/2 hour of burping and crying (Yes- sometimes I want to too- not burp so much , but cry) after he eats half of his meal. On top of all of that, I think that he now has pink- eye. What the Heck !?!





This morning, my daughter was waiting for the school bus to come and gave me a hug around the waist. Then she looked up at me and said, "but mom- I thought that your tummy wasn't supposed to be big after you have a baby."- (Nice, Carli!)- What the Heck !?!



And Finally- I am always checking my blogspot to see who has posted to comment or just to say"Hi!" (Thanks Sonja!) I know many people read this blog and don't comment. (You know who you are) Like Here and Here! Other bloggers get 7 comments, in like, 2 hrs. What the Heck !?!

In all of my negativity- I have been working on a project that is proving to be very satisfying- I will have to mention it later!

Out with the Old... In with the New!

We ordered a new dining set and were told that it would take 8-12 weeks for delivery. The furniture store called today and they have it ready for us. (It has only been 2 weeks) This one was free for us 10 years ago. It isn't much to look at, but we have had 10 years worth of meals on it- and have fond memories with it. I am sad to see it go- but it is time to welcome a new family dining room table into our home- Our new one will have enough seating for our whole family and some guests too! I just posted our old one on Craig's list and it sold within 15 minutes. I wiped it down for the last time tonight! When I think of all of the funny jokes (okay- not so funny) that the kids made up while we were eating dinner around it or when we caught Carli flicking rice that she didn't want to eat underneath it and had a good laugh about it, I grow a little sad!

Happy New Year- 2008!

Carli finally got her glasses yesterday! She is so excited to have them and has been keeping them on most all the time. She keeps asking me questions about when she should take them off though. (Like, Do I take them off on the trampoline?, Do I take them off when I wrestled with Dad? Do I wear them when I go swimming?- She's funny!)
Yesterday- I noticed that the boys were all wearing camo- it wasn't planned- (Later Nolan put on a camo shirt when we went to Costco- but we didn't get a picture)

Christmas Day!

Thanks to everyone for all the gifts and love that you have sent to us this year! It had a great Christmas Day! And now- the best is to come- we are gonna sit back for 3 days and while the kids keep occupied with their new toys! Tis the Season to be Jolly!!!

The kids were soooooooooo excited this morning. They opened our stockings up too and then were nice enough to tell us what Santa brought us.

Jack wanted to know what all the fuss was about! The kids kept putting his gifts on his tray and he got mad cuz he could only eat one up at a time!

Holiday Popcorn- Yum!

My Mom- in- Law gave me this recipe for popcorn and I decided to make it my treat for everyone this year. It is Super Yum cuz it is dry and crunchy, not soft and sticky!Holiday Popcorn
3 cups popped popcorn
1 cup brown sugar
½ cup kayro syrup
½ cup butter
½ tsp. salt
1/2 tsp. vanilla
½ teaspoon baking soda

*In a saucepan, stir brown sugar, kayro syrup, butter and salt. Bring to a boil for 5 mins, stir constantly. Take off heat and add vanilla and baking soda (almond extract can be used instead of vanilla). Line a baking sheet with foil. Bake at 250 degrees for 1 hour. (Stirring popcorn a couple of times the last 30 mins).
I found this cute tin at the $ store and made this one up for Bridger's preschool teacher.

Today's blog is really a mess of things that I had posted to my fridge. I was looking at the fridge last night and realized that I had way to much stuff posted to it. That quote was on there and so was Nolan's artwork...



I Thought that this was an awesome picture. Nolan had a learn to draw book to help him, but what impressed me, was that he put a lot of time into the whole thing!

Nolan always tells me that since I hate flies, I would probably like a house spider that eats flies. As much as I dislike flies, I will take them anyday over spiders- yuck! But, I thought this one was awesome!

I'm Such a Nerd!!!

Okay- You know that you are a big-o Nerd when you choose to post Counter Spray on your blog and hope you get some for Christmas! I had heard about this line of products at Target, called Method, and picked some up because I heard that they smelled AWESOME! (And lets face it- I can always use something to mask the dirty- diaper smell!) When I got there, I saw that everything was around $3 for a 12 oz. bottle. I took a chance, regardless of the high price, and now I have a
~New Love!!!~

I just thought that it was gonna smell nice- I wasn't expecting to actually like the Product itself! It DOESN"T Streak- I couldn't believe it! They have dish soap and all other kinds of cleaning products! I got the Cinnamon Bark scent- part of the Christmas Line!!! (But I heard that the Holly Berry- is wonderful too!) Now- I actually look forward to cleaning my counters!!!!

In other News...

My Baby- Girl, Carli, has been under the weather for about a week now! It was last Tuesday when she threw-up at shcool and has had a fever ever since. Jon and I felt her forehead this morning and she seems to be better- I won't give her any tylenol today and see if her fever is gone. It broke my heart last night when I was making cookies and asked her if she wanted to lick the beaters- she said,"No- I want to go lay on the couch." - Not what an active child usually says.
